Preparation
- Preheat the oven to 375°F (190°C).
- Sauté the garlic in olive oil until fragrant and just beginning to brown.
- Add fresh spinach to the pan and stir until it wilts down, about 2-3 minutes. Remove from heat to cool slightly.
- Mix the wilted spinach with cream cheese and Parmesan cheese until well combined.
- Slice each salmon fillet horizontally to create a pocket.
- Stuff each salmon pocket with the spinach and cheese mixture.
- Season the salmon with paprika, garlic powder, onion powder, black pepper, and salt.
- Sear the stuffed salmon in a skillet over medium-high heat for 2-3 minutes on each side.
- Bake the seared salmon in the preheated oven for 10-12 minutes, or until cooked through.
- Serve with lemon wedges.
