Ingredients

Fresh Tomato Sauce

  • 2 pounds fresh tomatoes Roma or San Marzano tomatoes are recommended for their flavor.
  • 1 tablespoon olive oil Extra virgin olive oil for better flavor.
  • 1 medium onion Finely chopped.
  • 4 cloves garlic Minced.
  • 1 teaspoon dried oregano For a classic Italian flavor.
  • 1 teaspoon dried basil Can substitute with fresh basil if available.
  • 1 teaspoon sugar To balance acidity of tomatoes.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground for best flavor.
  • 1/4 cup fresh basil Chopped, for garnish.

Instructions

Prepare the Fresh Tomatoes

  • Bring a large pot of water to a boil. Cut a small 'X' on the bottom of each tomato. This will help with peeling them later.
  • Once the water is boiling, carefully add the tomatoes and blanch them for about 30 seconds until the skins start to split.
  • Using a slotted spoon, transfer the tomatoes to a bowl of ice water to stop the cooking process. Let them cool for a few minutes.
  • Peel the skins off the tomatoes and chop them roughly. Set aside.

Cook the Sauce

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. This helps to develop the flavor base of the sauce.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant, stirring frequently to prevent burning.
  • Stir in the chopped tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Bring the mixture to a simmer.
  • Reduce the heat to low and let the sauce simmer uncovered for about 20-25 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken.
  • Taste the sauce and adjust seasoning if necessary. If you prefer a smoother sauce, you can blend it using a blender or food processor until desired consistency is reached.

Serve

  • Serve the sauce over cooked spaghetti or your favorite pasta. Garnish with fresh basil before serving for a burst of flavor and color.

Notes

For best results, use ripe, in-season tomatoes. You can also add red pepper flakes for a spicy kick or a splash of red wine for depth of flavor.
