Instructions
Prepare the Fresh Tomatoes
Bring a large pot of water to a boil. Cut a small 'X' on the bottom of each tomato. This will help with peeling them later.
Once the water is boiling, carefully add the tomatoes and blanch them for about 30 seconds until the skins start to split.
Using a slotted spoon, transfer the tomatoes to a bowl of ice water to stop the cooking process. Let them cool for a few minutes.
Peel the skins off the tomatoes and chop them roughly. Set aside.
Cook the Sauce
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. This helps to develop the flavor base of the sauce.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant, stirring frequently to prevent burning.
Stir in the chopped tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Bring the mixture to a simmer.
Reduce the heat to low and let the sauce simmer uncovered for about 20-25 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken.
Taste the sauce and adjust seasoning if necessary. If you prefer a smoother sauce, you can blend it using a blender or food processor until desired consistency is reached.
Serve
Serve the sauce over cooked spaghetti or your favorite pasta. Garnish with fresh basil before serving for a burst of flavor and color.
