  • 1 head Romaine lettuce Can substitute with kale or mixed greens.
  • 1 can Canned black beans Rinsed before use.
  • 1 cup Sweet corn Fresh corn off the cob is an alternative.
  • 1 cup Cherry tomatoes Halved.
  • 1 medium Red onion Thinly sliced.
For the Dressing
  • 3 tablespoons Olive oil Can substitute with avocado oil.
  • 2 tablespoons Fresh lime juice Lemon juice can be used if lime is unavailable.
  • 1 teaspoon Chili powder Adjust to taste.
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Instructions
  1. Wash and chop the romaine lettuce into bite-sized pieces.
  2. Rinse the canned black beans and sweet corn under cold water.
  3. Slice the cherry tomatoes in half and thinly slice the red onion.
  4. In a large mixing bowl, combine the chopped romaine lettuce, rinsed black beans, corn, halved cherry tomatoes, and sliced red onion.
  5. In a small bowl or jar, whisk together the olive oil, fresh lime juice, chili powder, salt, and pepper.
  6. Drizzle the dressing over the salad mixture and toss until evenly coated.
