Ingredients
  

For the Quesadilla
  • 1 tablespoon Extra virgin olive oil or butter
  • 2 cups Fresh spinach washed and chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 4 large Large eggs
  • 1 cup Feta cheese crumbled
  • 2 large Large flour tortillas
  • 1 cup Mozzarella cheese shredded
  • to taste Salt and pepper for seasoning

Method
 

Preparation Steps
  1. Heat the olive oil in a large non-stick pan over medium heat. Add the spinach along with garlic powder and onion powder. Sauté for about 1 minute until the spinach begins to wilt and become vibrant.
  2. Add the eggs to the pan and scramble them with a spatula, breaking up the yolk as you cook. Once the eggs are fully cooked, about 1-2 minutes, stir in the feta cheese and remove the mixture from the heat.
  3. Lower the heat to medium-low and place the flour tortilla in the pan. Sprinkle half of the mozzarella cheese on one half of the tortilla, then top it with the egg, spinach, and feta mixture. Finish by adding the remaining mozzarella cheese and fold the tortilla over.
  4. Cook the quesadilla for about 90 seconds on one side until it’s crispy and the cheese starts to melt. Flip it carefully and cook for another 90 seconds until lightly browned and the cheese is fully melted.
  5. Transfer the quesadilla to a cutting board or plate, cut it in half, and enjoy the cheesy, wholesome goodness!
