- Preheat the oven to 350°F (175°C).
- Beat together the cream cheese, powdered sugar, and 0.5 teaspoon vanilla extract until smooth and creamy.
- Mix the dry ingredients (flour, baking soda, and salt) in another bowl.
- Cream the softened butter, light brown sugar, and granulated sugar until fluffy.
- Add the egg, egg yolk, and 2 teaspoons of vanilla extract to the mixture and mix well.
- Blend in the dry ingredients gradually, mixing until just incorporated.
- Fold in the white chocolate chips, strawberry extract, and freeze-dried strawberries.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
