How to Make Vanilla French Beignets
  1. Combine the dry ingredients in a large bowl. Mix the all-purpose flour, granulated sugar, active dry yeast, and salt until well blended.
  2. Whisk together the wet ingredients in a separate bowl. Blend the warm milk, melted unsalted butter, and pure vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients gradually. Stir gently to form a soft dough.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  5. Let rise the kneaded dough in a greased bowl for about 1.5 hours, or until it doubles in size.
  6. Punch down the dough to release air. Roll it out to about 1/4 inch thickness, then cut into 2x2 inch squares.
  7. Heat the vegetable oil in your deep fryer or large pot to 360°F.
  8. Fry the beignets in batches for about 1-2 minutes on each side until golden brown.
  9. Dust generously with powdered sugar before serving.
  10. Cool the beignets slightly on a wire rack if not serving immediately.
