Ingredients

For the Casserole

  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 packet taco seasoning or homemade taco seasoning
  • 1 cup salsa mild or spicy, based on preference
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheddar cheese or Mexican blend cheese
  • 1 cup sour cream for topping
  • 1 cup chopped lettuce for serving
  • 1 cup diced tomatoes for serving
  • 1/2 cup sliced jalapeños optional, for serving

Instructions

Prepare the Beef Mixture

  • In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. This step is important to ensure the beef is fully cooked and crumbly.
  • Once the beef is browned, drain any excess fat. This will help prevent the casserole from becoming greasy.
  • Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir well to combine and let it simmer for about 5 minutes. This allows the flavors to meld together.

Assemble the Casserole

  • Preheat your oven to 350°F (175°C). This ensures the casserole cooks evenly.
  • In a 9x13 inch baking dish, spread half of the crushed tortilla chips evenly across the bottom. This will create a crunchy base for the casserole.
  • Spoon the beef mixture over the tortilla chips, spreading it out evenly.
  • Top the beef mixture with half of the shredded cheese, ensuring even coverage.
  • Layer the remaining crushed tortilla chips on top of the cheese, followed by the rest of the beef mixture, and finish with the remaining cheese.

Bake the Casserole

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. This helps the cheese melt without burning.
  • After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

Serve

  • Remove the casserole from the oven and let it cool for about 5 minutes. This makes it easier to serve.
  • Top with sour cream, chopped lettuce, diced tomatoes, and sliced jalapeños as desired. This adds freshness and flavor to each serving.
