Ingredients

For the Salad

  • 4 cups watermelon cubed, seedless
  • 1 cup cucumber diced, preferably English cucumber
  • 1 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped

For the Dressing

  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar or red wine vinegar
  • 1 teaspoon honey optional, for sweetness
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground, to taste

Instructions

Prepare the Salad

  • Start by cutting the watermelon into 1-inch cubes. Make sure to use a seedless variety for a smoother texture.
  • Next, dice the cucumber into small pieces. If using an English cucumber, you can leave the skin on for added color and nutrients.
  • In a large mixing bowl, combine the cubed watermelon, diced cucumber, crumbled feta cheese, thinly sliced red onion, and chopped mint leaves.

Make the Dressing

  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and black pepper until well combined. This emulsifies the dressing and enhances the flavors.

Combine and Serve

  • Drizzle the dressing over the salad mixture and gently toss to combine. Be careful not to crush the watermelon or feta.
  • Transfer the salad to a serving platter and garnish with additional mint leaves if desired. Serve immediately for the best flavor and texture.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 2 hours. The dressing can be made ahead of time and stored separately until ready to serve.
