Ingredients

For the Casserole

  • 4 medium zucchini sliced thinly
  • 1 cup yellow onion finely chopped
  • 2 cloves garlic minced
  • 3 large eggs beaten
  • 1 cup heavy cream room temperature
  • 1 cup shredded cheddar cheese divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

For the Topping

  • 1 cup panko breadcrumbs
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons unsalted butter melted

Instructions

Prepare the Oven and Baking Dish

  • Preheat your oven to 350°F (175°C). This ensures that the casserole cooks evenly and thoroughly.
  • Grease a 9x13 inch baking dish with butter or non-stick spray to prevent sticking.

Prepare the Zucchini Mixture

  • In a large mixing bowl, combine the sliced zucchini, chopped onion, and minced garlic. This mixture forms the base of your casserole.
  • Add the beaten eggs, heavy cream, half of the shredded cheddar cheese, salt, pepper, and thyme to the bowl. Mix well until all ingredients are combined.

Assemble the Casserole

  • Pour the zucchini mixture into the prepared baking dish, spreading it evenly.

Prepare the Topping

  • In a separate bowl, combine the panko breadcrumbs, grated parmesan cheese, and melted butter. This mixture will create a crunchy topping.
  • Sprinkle the breadcrumb mixture evenly over the zucchini mixture in the baking dish.

Bake the Casserole

  • Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the top is golden brown and the casserole is set. The baking time may vary based on your oven.
  • To check if it’s done, insert a knife in the center; it should come out clean.

Serve

  • Remove the casserole from the oven and let it cool for about 5-10 minutes before serving. This allows the casserole to set and makes it easier to cut.

Notes

Feel free to add other vegetables such as bell peppers or mushrooms for added flavor. You can also substitute the cheddar cheese with mozzarella for a different taste.
